In kitchens around the world, a quiet revolution is simmering. Beyond sous vide machines and molecular gastronomy kits, chefs are turning to an unlikely sous chef: artificial intelligence (AI). This interesting topic came to us from The New York Times in their article, “This Year’s Hot New Tool for Chefs? ChatGPT.

Generative AI tools like ChatGPT are becoming culinary companions. Many chefs use ChatGPT to spark new ideas by inputting available ingredients and dietary requirements to receive a wide array of creative suggestions. It doesn’t replace their expertise, but it acts as a digital brainstorming partner, expanding the horizon of possibilities within a cuisine’s framework.

AI’s broad dataset enables chefs to explore flavor profiles and techniques from diverse cuisines. Curious about Burmese curries or Peruvian stews? ChatGPT can offer overviews, common ingredients and traditional preparation methods, allowing chefs to research efficiently before deepening their exploration through cultural study and culinary practice.

Generative AI integrated into kitchen management systems can assist with real-time food cost calculations, vendor comparisons and portion control recommendations. While spreadsheets and POS integrations remain essential, AI can synthesize data into actionable summaries, saving chefs administrative hours each week.

However, as always the quality of the data directly affects the results. AI often draws from datasets without fully understanding cultural context, meaning it can oversimplify, misrepresent or appropriate traditional cuisines without respect for their origins. Chefs must critically assess AI suggestions for cultural sensitivity and accuracy.

And obviously, AI cannot taste, smell or feel texture, so it can’t assess whether a suggested flavor pairing or technique will deliver the intended result. It also may not understand regional dialects or slang terms for ingredients, leading to confusion.

While no technology replaces the creativity, intuition and sensory mastery of a chef, generative AI tools like ChatGPT can enhance creativity, reduce operational friction and open new avenues for learning and exploration.

The biggest challenge is that most organizations have little knowledge on how AI systems make decisions and how to interpret AI and machine learning results.
