In kitchens around the world, a quiet revolution is simmering. Chefs are turning to an unlikely sous chef: artificial intelligence (AI). This interesting topic came to us from The New York Times in their article, “This Year’s Hot New Tool for Chefs? ChatGPT.

Generative AI tools like ChatGPT are becoming culinary companions. Many chefs use ChatGPT to spark new ideas by inputting available ingredients and dietary requirements to receive a wide array of creative suggestions. It doesn’t replace their expertise, but it acts as a digital brainstorming partner, expanding the horizon of possibilities within a cuisine’s framework.

Generative AI integrated into kitchen management systems can assist with real-time food cost calculations, vendor comparisons and portion control recommendations. While spreadsheets and POS integrations remain essential, AI can synthesize data into actionable summaries, saving chefs administrative hours each week.

However, as always the quality of the data directly affects the results. AI often draws from datasets without fully understanding cultural context, meaning it can oversimplify, misrepresent or appropriate traditional cuisines without respect for their origins. Chefs must critically assess AI suggestions for cultural sensitivity and accuracy.

While no technology replaces the creativity, intuition and sensory mastery of a chef, generative AI tools like ChatGPT can enhance creativity, reduce operational friction and open new avenues for learning and exploration.

The biggest challenge is that most organizations have little knowledge on how AI systems make decisions and how to interpret AI and machine learning results.
